How to do it

Steam the asparagus 15 minutes, add a pinch of salt.take 3 asparagus and place them close one each other on a dish.toast the slices of bread, cut them in diagonal and put them over the asparagus with a strip of olive oil.
Place some rocket leaves and the edulous flowers besides.now take a pot and boil some water.this is not the usual way to cook a poached egg, but it’s easier: take a glass and place inside it the cling film to contain the egg. Open one egg and put it inside the glass cling film, close it well with a cooking string and put the glass inside the boiling water pot. Leave it cooking 4 minutes,meanwhile put the condiment based on butter with white truffle, in a cooking pan and melt it 2 minutes at low flame ,.then pour it at the base of serving dish .after 4 minutes pull out the egg, free it from the cling film and place it over the condiment based on butter with white truffle previously put on serving dish.now bring it to the table , decorate and cover it with some thin white truffle slices.

  • 4 organic eggs
  • 12 asparagus
  • 15 g. Rocket salad
  • 2 slices toasted bread
  • Evo (extra virgin olive oil) as required
  • Salt as required
  • Edulous flowers 3/4
  • 40g.condiment based on butter with white truffle
  • White truffle (tuber magnatum pico )
