Summer truffle in brine

To flavor the black truffle the best known recipe is to use a part of the ground or sliced truffle in a pan with extra virgin olive oil, a clove of garlic just golden in the oil and an anchovy for a few minutes, adjusting salt, pepper and parmesan. You can serve the other part of the truffle raw on top of your dish. Ideal as a condiment for pasta or croutons.

Ingredients: summer truffle (Tuber aestivum Vitt.) 80%, water, sea salt.
